Heritage Chicken
Heritage chicken are a far cry from commercial
broilers. They have a different distribution of white and dark
meat, are twice as old (at least), and on a small farm setting have
spent their days in active pursuit of tasty things to eat which
makes them a very fit, and somewhat tough by today's standards,
bird. But on the plus side they are far more flavorful.
Their flavor and substance allows you to get multiple meals from
just one bird.
