American Rabbit
We have been fortunate to start a breeding colony of American
rabbits - one of the rarest of all rabbit breeds and listed as
critical on the American Livestock Breeds Conservation priority
list. They are also listed on the Slow Food USA Arc of Taste.
Never tried rabbit? It is an all white meat similar to chicken
breast. It is skinless. You can use it in just about any
recipe you have for chicken. It is very tasty, has a nice
texture, and cooks very cleanly in stewing recipes. I know its hard for some people to think of rabbits
as meat animals but rabbits are very efficient at converting plant matter into
meat. They are a "forgotten" meat animal that hopefully will
regain popularity.

We have been trying out different ways to graze our rabbits and
offer them as close to a "free range" lifestyle as possible.
We tried the "real" free range scenario and soon had dozens of
little white rabbits hopping about the place at dusk. It
looked like a rabbit wonderland. Surprisingly they escaped the
coyotes but their burrowing wrecked havoc on our barns and it
was impossible to regulate breeding. Collecting them for
butcher also became very unpredictable as we might go several days
without seeing them if they decided to stay underground. So we
had to come up with something else.
Our latest attempt is the "rabbit tractor" which has a wire floor
with 2" x 4" gaps that allow the rabbits to eat grass but is not
wide enough for them to slip through if they try to dig. Its
also strong enough to withstand an assault by a coyote or raccoon.
We are using it with the rabbits once they are weaned and they seem
to love it.
